In Maine Corn Bread is sometimes called Johnny Cake! I love the sweet bread with Chili but I don’t like how high in calories it can be! I have lightened this recipe using no-sugar added applesauce and every time I make it this way the whole batch is gone in no time!!! I find that it’s very moist and sweet and very flavorful too

Ingredients:
- 1-1/4 cups white whole wheat flour
- 3/4 cup Quaker yellow Corn Meal
- 1/4 cup sugar in the raw
- 2 tsp. baking powder
- 1 tsp. Salt
- 1 cup skim milk
- 1/4 cup no-sugar added applesauce
- 2 large egg whites
Directions:
Heat oven to 400 degree’s F. Spray an 8 or 9 inch square pan. In a medium bowl combine the dry ingredients. Stir in the Milk, applesauce and egg whites; mix just until the dry ingredients are moistened. Pour batter into prepared pan. Bake 20-25 min. or until the bread is light golden brown and a toothpick inserted in center comes out clean.
