Banana Oat Muffins

Yesterday was the kids first day back to school after Christmas vacation, when I got up I wanted to make them something they could grab quickly and was healthy to start their day off right. I happened to check my e-mail and there was one from www.allrecipes.com I had plenty of banana’s and it’s nice to try something new in a pinch. I even took some muffins to a few of my client’s, non of them cook anymore and they love the homemade treats!

Directions
1 1/2 cups White whole wheat flour
1 cup rolled oats
1/2 cup white sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 egg
3/4 cup milk
1/2 cup Apple Sauce
1 teaspoon vanilla extract
1 cup mashed bananas

Directions

1.Combine flour, oats, sugar, baking powder, soda, and salt.
2.In a large bowl, beat the egg lightly. Stir in the milk, applesauce, and vanilla. Add the mashed banana, and combine thoroughly. Stir the flour mixture into the banana mixture until just combined. Line a 12-cup muffin tin with paper bake cups, and divide the batter among them.
3.Bake at 400 degrees F (205 degrees C) for 18 to 20 minutes.

So they updated my wordpress and I have to admit that I have been dead in the water for the last month!!! I am so very sorry :( I seem to be able to put pictures into my post today but it isn’t exactly as I want it to look. I truly am a perfectionist and it frustrates me when things are wrong!

I try to get up early and make them breakfast when I can, they are getting older and are such early birds! Hard to beat them to breakfast sometimes!!!
